Our Coffee of the Month for January is a spice-forward washed coffee from the Cooperativa Café Timor group in East Timor. This coffee has the typical characteristics of a coffee from Indonesia, with very little acidity and a medium-heavy body. You get the savory spice notes right at the beginning of the cup with the flavor and mouthfeel of ginger. Dry chocolate notes of cocoa powder enter in the middle of the cup along with sweet tobacco notes. The finish is long and dry with the spicy ginger and tobacco notes melding in a fantastic lingering aftertaste.
