This coffee is rich and has a wonderful syrupy body for a light roast. It is sweet, bright and balanced. It has a wonderful acidity up front with notes of fuji apple and lime tartness. The apple notes follow into the middle of the cup and it finishes with a vanilla sugar sweetness.
Story: This coffee is sourced from the southern state of Chiapas, Mexico, where there are mountain ranges that provide higher altitudes and ideal climates for cultivating coffee. The vast majority of farms are family-owned with less than 10 hectares of land. The coffee harvest typically begins in October and ends in March.
